Half split Egg Curry or Anda Curry

Hard boil the eggs in a pan

 Then cut them into half as shown
 
Take a wok and add 4 tsp of mustard oil

 
Fry the cut eggs by adding turmeric to add some color to the eggs.
Similarly take boiled potato cubes and fry them in the same oil till they become a little crispy.

Now keep the eggs and potatoes aside.
 


Now take 3 tsp of mustard oil and add chopped red onion
 
 
 When onion changes its color to pink you can add one plump tomato cut into cubes.

Then wait till the onion and tomato are cooked and all water evaporates.
Then add the dry masala ..1 tsp turmeric powder,1 tsp red chilli powder ,1 tsp coriander powder,1 tsp cumin powder and salt to taste.

Once everything is mixed ,wait for 5 min to cook and then you can add little water to have a gravy texture
Now you can add the fried eggs and potatoes and boil them all.
Wait for 6-8 min depending on how thick or thin gravy you want.

 
Serve hot with roti or rice

Quick Panipuri

I am up for a quick panipoori ..

So here I grabbed some stuffs from the local grocery store :

For the puris:
-----------------
Panipuri packet (1 packet has 42-50 pcs ,it comes with panipuri masala)

For the pani : MDH Panipuri masala
----------------------------------------------
Take a bowl full of chilled water and mix the panipuri masala along with few mint leaves (pudina patta )


For the stuffing:
---------------------

Take 4 boiled potatoes and to that add chopped onion ,chopped green chillies,red chili powder,salt to taste,chopped cilantro.

Mash the potatoes and mix  everything together.

So now everything is in place..






Time to Serve:
-------------------
Prick the panipuri and add the potato stuffing ,add chopped onion ,add a pinch of salt and red chilli powder and some lemon juice if you wish to

Then dip into the pani and ENJOYYYY your quick panipuri,puchka,gupchup or golgappas

If you dont like pani ..then you can have them as sukha puri too with some chickpeas
